This sounds good but is 1 teaspoon juniper berries correct? That doesn’t seem like much. Are they fresh or dried? Thank you.
Hello Donna, thank you for your question. Yes, 1 tsp is what I used in this recipe. Juniper has a deep flavor and can be very strong. It is a teaspoon of dried juniper berries, crushed in mortar. This recipe was tested with a tablespoon of dried and crushed juniper as well, and the juniper flavour was too potent. I prefer subtle flavours that do not overpower other ingredients. If you wish to have a full body of juniper flavour, you can add more. Let me know how it turns out for you. Enjoy a spoonful on your favourite bread or you can also spread it over roasted vegetables.
